I'm not sure I have convincingly yet seen Rey return Finn's romantic interest, though I wouldn't say she "friendzoned" him - at least, there's a lot of room for that romance to happen, I just don't think it happened yet.

I also don't think it necessarily will happen. Luke/Leia was "supposed" to happen in the original film. Though Finn/Rey seems like a cute pairing, I kind of like obvious pairings not actually turning out.

IIRC there was some leaked info that Han/Leia was so popular they made Luke and Leia siblings to sink the ship. But the same person who told me this added "it might have been the other way around" which, to this day, I'm still really confused about.

Well, whether or not Lucas had decided they'd be siblings or not, it wasn't revealed in the first movie. And Luke clearly had a crush on Leia, and he was the protagonist, and usually the male heroes get the girl.

The reveal is only in the third film, with no lead-up to it in either the first or the second film. Some people interpret the "there is another" as referring to Leia, which works retroactively, but it could as easily have been another random person, or Han or Wedge or Chewie. No mention that Leia was adopted until the third film.

Also, the fact that Lucas put in the Luke/Leia kissing scene in Empire, which now induces groans - I do not buy for one minute that he planned, all along, to have them as siblings, because he didn't lay the groundwork, and he retroactively made the possible love triangle look really gross.

Interestingly, I recently read a review of the second movie written when it came out. The reviewer speculated that the "other" was indeed Han - there wasn't even a thought that it could possibly be Leia. More just interesting to think that in 1980 or whenever, maybe no one considered that Leia was "the other" potential Jedi.

I saw a thing that the earlier scripts had it that Luke would be tempted to the Dark Side by Vader, and Luke's twin Nellith would be introduced.

Yeah I watched some commentary or documentary with George Lucas narrating a long time ago and he said something changed in the script. Probably for dramatic purposes. I wish I could remember where exactly I heard that from.
