But one of my favorite fanfictions ever was told in this perspective. Honestly first-person turns me off even more tbh and I don't even know why

Same. I'd always associated it with Choose-Your-Own-Adventure stuff before I read a REALLY good (and porny) fic with it, and now I write in it myself on occasion and they're some of my most popular pieces.

OP just hasn't read good fic. Terrible authorial choices and a lack of talent can ruin ANYTHING.

OP here - actually, same. I'm in a fandom where this is really prevalent though; one might even say it's the standard. So many of my favorites are written in this format, but I still find it grating and increasingly hard to read, especially in fics when the POV switches and "you" suddenly is a new person.

But at the core of it, I'm not even sure why I don't like it to be honest.
