What easy exercises can i do that do not require stamina and will not stress joints (but will build muscle over time)?

Weight lifting done correctly does not stress joints. There is, of course, potential for injury if they are done incorrectly, and usually the cost of a gym membership.

I would say your best bet for something easy would be to google boy weight exercises and start trying build up your strength that way. Push ups, planks, chair dips... all more or less meet the criteria you're looking for.
