My mom really loves these kinds of books. If you look at a few key things:

a) she's a hardcore Christian
b) she divorced my dad back in 2012 because she found out he was cheating on her
c) they were likely sexually incompatible (judging from remarks she made offhand about the sexual shit he'd say to his mistresses in his texts)
d) she goes nuts over Nicholas Sparks books and Hallmark channel movies

I think a lot of it is the secure, romanticized purity of it. It's all about love without sexual attachment, the men are trustworthy and act as protectors, and they sweep these women off their feet. I personally think it's all a bunch of schlock, but from an objective viewpoint, it's an idealistic story that I can easily see a lot of women finding pleasure in - especially those that are middle-aged, have been burned multiple times or just once in a very bad way, and that likely don't enjoy the sexual pressure that a lot of men put on them - because these kinds of romances to fit more into their fantasies.
