I think there's a lot to it beyond just 'sexism' or whatever. And I think you're vastly underestimating just how much we give vaginas to not-vagina-having people. (a/b/o, intersex!Loki, any sort of alien character, even the way most slash fic describes anal makes it sound much more like vaginal intercourse).

But as to why adding dicks happens to much, tere's the very obvious visual aspect. Vaginas are lots and lots of wrinkly, oddly-colored, naturally hairy wet skin. It's a combination of things that even on their own most people don't find terribly appealing. Meanwhile dicks tend to be fairly neutral, and if you asked I bet most people could tell you what an 'attractive' dick looked like.

But I think it also has a lot to do with how obvious male sexual response is. You can see when they're aroused. You can see just how aroused they actually are (semi- or fully erect). You can see when they orgasm, regardless of how reserved their reaction might otherwise be. And there's no mystery about how to give them pleasure.

Female sexual response is a lot more complicated. Many women don't like vaginal sex, or can't get off on it. Their arousal isn't as blatant. So is orgasm.
