1. A Ghibli-esque version of Patricia C. Wrede's Enchanted Forest Chronicles (but w/ more actual following of the plot, and not going the HMC route)

2. The AtLA people making adaptations (movie or TV show tbh) of Tamora Pierce's Circle universe

3. The GoT people making an adaptation of Tamora Pierce's Tortall universe. Just, without the gratuitous sex.

I was mostly joking, because there is some sex in the books, but in all serious:

- The actors. Say what you will, but they managed to get a lot of really good actors, Charles Dance, Gwendoline Christie, Lena Headey, etc.

- The production values when it comes to the costuming/sets. I'll admit that I'm not a big GoT watcher, but from what I've seen, the sets and the costuming look amazing. This is especially good when it comes to Brienne of Tarth, and her sensible lady armor, which would be a must given that two of the stories are about woman knights.

- The CGI. I think that the dragons on GoT look pretty damn cool, and while there wouldn't be a lot of mythical creatures until the second season/series? when Daine shows up, it would be cool to use their production team to make the dragons and stormwings and whatnot.

There's some other things, but those are my big three. Well, that and the budget lol. Tortall being made with that kind of budget? Oh lordy that'd be awesome!

I would totally get on-board with 1 and 2, but a ginormous FUCK NO to 3. GoT is a trainwreck, and Tamora Pierce's books deserve better.

See my comment below, I'm more talking about the production values/budget/cgi/etc. of GoT.
