For talking about food.

Thanks to whomever it was here that suggested going half-rice with fajita veggies on qdoba bowlfajitas veggies were good and the only other difference I noticed was that I didn't feel as sluggish as usual afterward.

Breads & Vegetarian Sushi

Does anybody make bread? Is there a particular recipe you use? I'm not doing a baguette until I'm more experienced but I am trying to

1) make a gluten free bread for some family. I have the rice flour, any particular recipes/variation on recipes one might have?

2) any particular variations on banana bread recipe? I have it from the box, but before I go in, does anyone have any family/personal changes they make

SUSHI
-what's your favorite vegetarian sushi recipe?
-does anyone make their own sticky rice?

Other
-how to use sweet rice flour? / your preferred recipes for using sweet rice flour


And yes, I can google these things, but if anyone has experiences making these items and has a tidbit to share, it'd be much obliged!

Here is the recipe I use for banana bread! I dunno how much this will help you if you're not planning on making it from scratch, but:

1/4 c. oil
1/2 c. sugar
2 eggs
2 mashed bananas
2 c. flour
1/2 tsp baking powder
1 tsp baking soda
3 tbs milk
1/2 tsp vanilla
1/2 c nuts, optional

Mix oil and sugar. Add eggs and beat well. Add mashed bananas and mix thoroughly. Mix together dry ingredients and add banana mixture. Mix in remaining ingredients. Pour into greased and floured loaf pan (9x5). Bake at 350 for 1 to 1.5 hours, or until it passes the toothpick test.

NOTE: I never bake it that long...at all. Put it in for 30 minutes and then check it. I think that may have been a typo or something on the recipe.

I also like to use chocolate chips instead of nuts, or just leave them out (I'm not a fan of nuts in breads/cakes), and I like to use 3 bananas instead of 2, but it's not required. It'll make it more moist and chewy though :3

I definitely err on the side of caution with baking times as well as oven temp - I always set my oven 25 degrees less than the recipe even though it's not convection, because it's just old and shitty and overcooks things. It's not as good if the crust is burnt, though the inside should still be tasty lol

Making bread and making gluten-free bread are two very different things. I think it would be helpful to learn how to make regular bread first, but keep in mind that not being able to use wheat makes a huge difference in texture and you'll need to add other ingredients to compensate for how heavy non-wheat flours are. Look for tried and true recipes, don't try to just substitute on your own.

Do you mean sushi rice? Well, yeah. Nishiki short grain rice, cooked and mixed with a vinegar/salt/sugar sauce. Vegetarian sushi is kind of tricky because I think doing just vegetables is a bit boring. Maybe try roasted asparagus? Avocado? Thinly julienned carrots?

I'm out of soy sauce and now I need to go back to the store, but it's late and I thought I was in for the night!

Soy sauce. One of those things you never run out of until you do.
