a) Lose weight and keep it off (at one point I was close to 200lbs; chronic illness, wooooo)
b) Feed myself plus room mates on under $100/person, with me footing a grocery bill and doing the cooking
c) Maintain an ovo-lacto vegetarian diet without wanting to strangle things lol
Plus, one of my greatest joys in life is feeding people in a way that is healthy and balanced but also enjoyable for everyone involved. I am definitely guilty of expressing my love through food.

I'm guilty of wanting to cook for people too, but not well. I cook rather terribly when left to my own devices, so I usually end up baking, which comes out well but is the opposite of healthy.

Still requires getting fairly creative if you want to make beans and tofu taste good though lol.

Nothing makes beans taste good. The texture alone gives them away as a demon food. I've had tofu, I didn't think it tasted bad, per se, but I didn't care for the texture. It mostly didn't taste like anything.

It can be very meaty and pleasing if it's prepared and seasoned correctly, but yeah. Takes a lot of trial and error and experimentation to make a pleasing experience out of a largely plant-based diet.

It's one of those foods that's just horrid unless you know how to prepare it, at which point it can become very nice.
