OP can you share a good American-style apple pie recipe(s)? I love apple pies so I'd love to try some.

I don't follow a recipe, per se. If you have a favorite pie crust recipe, use that. I use one from Cook's Illustrated, but I can't find it online. It isn't the one with vodka in it, though that seems pretty popular. Then I just peel and thinly slice a bunch of apples, enough to fill a deep dish pie pan. I prefer Granny Smith, which is a tart apple, but many people prefer sweeter varieties. Then I toss it with 2-3 Tbsp. sugar, 2 Tbsp. flour and 1/2 tsp. cinnamon and fill the crust. I cut up 3 Tbsp. cold butter into small cubes and sprinkle it on top of the apples before putting the top crust on. This recipe is more of a guideline, but it gives you a good idea of what's involved:

Not OP, but I've had very good results with this:

What I did with this was add about two teaspoons of Penzey's pie spice. Also, I poured about 3/4 of the syrup mixture over the apples before adding the lattice crust, and then poured the remainder on top.

Although Alton Brown makes his in a tart pan (even though it is an American-style 2-crust pie), it is still good in a sloped-side pie dish. But having done it both ways, the tart pan IS better.
