This episode annoyed me too, mostly because pie is my favorite dessert. It can be too sweet, true, but not if you make it right. There are ways to balance the sweetness such as mixing sweet and tart ingredients (strawberry and rhubarb together) or putting in less sugar if you are going for just sweet fruits. And really, so what if Americans like their pie sweeter than the British. Fruit pies are amazing. And different tastes are different tastes. I find a lot of British foods boring, and I mostly hate meat pies. But I don't go around insulting them.

Wikipedia agrees with you, OP. It's the only episode with more than just a description of what tasks the bakers carried out.

"During the broadcast, Ryan's pie was identified as a key lime pie. However, it was made with ordinary limes rather than key limes, and thus was not a key lime pie. Moreover, the pies described as American-style were actually tarts. American pies are baked in a smooth, slant sides pie pan, not the fluted tart pans that were used."

I never saw that season, but that makes me sad!

There are certainly American-style pies (even those served at places that claim to be famous for their pie) that consist of too much gelatenous glop and fake whipped cream and are terrible. However, an American-style pie done right, with a tender, crispy crust, is a slice of heaven. Fruit pies heavy on the fruit, pecan pies heavy on the nuts, cream pies that don't go overboard with the gelletin, pumpkin pies, milk bar (AKA "crack") pies... I love them more than cake!

...compared to some of the baked goods that the contestants could barely even pronounce the names of, I would have thought American desserts would be relatively easy to do right. Yes, they can be sweet, but that doesn't mean to treat it like a piece of candy that's all about the sweet and no nuance and flavor to it.

Pies are rather srs biznes where I come from and yeah the super-sweet pies don't usually fly, people really go for the ones with a nice warm spice or a bit of a tart bite to them.
Unless we're literally talking about candy-inspired pies, but even then, it's usually the richness rather than the sweetness that'll take you down first. :p

SO MUCH THIS! I couldn't believe no one made a damn fruit pie, that was an insane decision. And no one put crust on top of their pies! I was looking forward to see an amazing apple pie but everyone made weird tarts or something?

The key lime pie was the only serviceable one, but it looked a lot different from the key lime pies I'm used to seeing.

That episode was a travesty.

This. How is it an American style pie with no crust on top? Every pie I've had apart from pecan and meringue pies have crust on top. The crust is sometimes the best part. And all those pies looked very flat too. Pies are supposed to be stuffed with tasty things to eat.

I don't follow a recipe, per se. If you have a favorite pie crust recipe, use that. I use one from Cook's Illustrated, but I can't find it online. It isn't the one with vodka in it, though that seems pretty popular. Then I just peel and thinly slice a bunch of apples, enough to fill a deep dish pie pan. I prefer Granny Smith, which is a tart apple, but many people prefer sweeter varieties. Then I toss it with 2-3 Tbsp. sugar, 2 Tbsp. flour and 1/2 tsp. cinnamon and fill the crust. I cut up 3 Tbsp. cold butter into small cubes and sprinkle it on top of the apples before putting the top crust on. This recipe is more of a guideline, but it gives you a good idea of what's involved:

Not OP, but I've had very good results with this:

What I did with this was add about two teaspoons of Penzey's pie spice. Also, I poured about 3/4 of the syrup mixture over the apples before adding the lattice crust, and then poured the remainder on top.

Although Alton Brown makes his in a tart pan (even though it is an American-style 2-crust pie), it is still good in a sloped-side pie dish. But having done it both ways, the tart pan IS better.

I have an australian friend who dislikes this show, and I get the impression it's because she feels this way about a lot of the things they bake. That they "signature" them into oblivion. This episode made me understand her perspective.

As someone who bakes a lot and particularly enjoys very sweet desserts, that kind of rankles. And looking at which pies they chose, yeah, I would have expected at least one variation on an apple or cherry pie (I'm not a huge fruit pie fan and might have gone for a Shoofly Pie, Mississippi Mud, French Silk or even a S'more Pie, myself), though Pumpkin and Pecan do immediately come to mind as American pies.

When they tried and failed to make it with the American version, I know Paul Hollywood was on (and cheated on his wife with someone on the show!) Surely they got to pie on that show. How did that work out?

I seem to remember them trying to make traditional German cakes as well once in a while and aside from the fact that I don't know a single person who calls a Baumkuchen a Schichttorte, they were supposed to make a Black Forest gâteau but that stuff they made didn't even look remotely similar.
