No, but I love these loaded sweet potato nachos:

I use queso fresco instead of cheddar (I thought cheddar would taste weird with sweet potato).

Don't worry about trying to bake the potato until completely crispy - they'll just burn. Bake them so they start to get crisp around the edges, but they can be soft in the midde. Keep a close eye on them and move them around on the pan if they're starting to get too brown in one part of the oven. I bake them spread out and then push them together in a pile before adding beans and cheese.
