As someone who's been through a lot of shit in life, I noticed a lot of my characteristics: humor, the way I communicate with people, how open I am, how I cope with my feelings etc, change DRASTICALLY as a consequence of those things. If I lived a sheltered and sweet life I would be a totally different person, yes.

Well sure, but... most AUs aren't about "Character X in a world where they were raised in a happy loving home instead of an abusive, broken one". It's about "Character X if he was a 1920s private eye". You're generally not looking to rewrite the entire character from scratch, because that'd be missing the point.
