Last time I went to a potluck there were FIVE KINDS OF POTATO SALAD and not enough other stuff. Everybody stop bringing potato salad, k?

1 cup sour cream
1 tablespoon sugar
1.5 teaspoons salt
2 tablespoons cider vinegar
1 metric buttload of chopped red onion

Mix with a fork, slice 3 cucumbers into a large bowl, pour dressing on em, and stir with spatula. If there will be a gap of time between prep and serving, transport dressing and cuke slices separately and only mix em when they're about to be served so the cukes don't water down the dressing before the salad can be et.

I love taking desserts to potlucks at work, but after two potlucks where ninety percent of the foods were desserts, we started getting assigned foods. It kinda sucks.

Unless someone's really organized well, a lot of potlucks tend to be a bunch of side dishes or a bunch of desserts and not enough entrees or one-pot type meals. A big chunk of pork shoulder overnight in a crockpot with sliced onions and maybe a can of chicken broth (or beer if your co-workers are okay with alcohol), then the next morning dump in a bottle of your favorite bbq sauce and mix it all up. Bring hamburger buns.

Or I'll brown some Italian sausage, then add chopped garlic, onions, a few cans of crushed tomatoes and a can of tomato sauce, a good slosh of red wine and some basil and oregano. Simmer for half an hour or so, season to taste with salt and pepper. Then cook some pasta - the corkscrew shaped kind is nice, or penne is good, too. Mix it into the sauce and put it into a big casserole dish and sprinkle a lot of mozzarella or provolone on top and bake it in the oven at 350 F for maybe 10 minutes or until the cheese melts and gets a little browned on top. Bring garlic bread.

If you're going somewhere with an oven to reheat stuff or will be eating soon after you get there so you can reheat it and bring it still hot, lasagne or enchiladas. If it has to be good cold or at room temperature, potato or pasta salad. Kale salads hold up well, too. Fruit salad. A good quality--taste test first--sliced cold watermelon with lime wedges. Brownies or cookies if you know not everyone's bringing sweets.
If you're hosting, layered nachos are fun. I'm vegetarian so I use soy chorizo, but you could use carnitas or real chorizo. Get the tortilla chips made from actual tortillas, they hold up better. Then you chop tomatoes, red or orange bell pepper, scallions, and cilantro. Grate a ton of cheese and drain and rinse a couple cans of black beans. Get a tub or jar of a salsa you like, avocados, and sour cream. Maybe slice some jalapeños. Layer chips, cheese, and (cooked) meat. Mix together tomatoes, bell pepper, black beans, jalapeños, and half the scallions, and scatter half over the meat, then do another layer and top the whole heart attack with more cheese. Pop in a 350 degree oven until the cheese melts and starts to brown and bubble a bit. Set out cubed avocado or guacamole, salsa, sour cream, lime wedges, and chopped cilantro, and more chips. I don't drink but beer and/or margaritas wouldn't hurt.

Brownies or bars. Desserts are a good call, and the brownie/bar family is more attractive than either cookies or cake, but stills something you can eat with your hands and not make a mess.

Appetizers: keftedes (Greek meatballs), dolmas, potstickers, spring rolls, shrimp toast, shrimp Rangoons, easy to make or buy frozen from Trader Joe's, Costco, Walmart, etc.

Potlucks: anything casserole, Mac and cheese, taco salad casserole (layered taco meat, tortilla chips, sour cream, salsa, cheese), crockpot BBQ (pulled pork or chicken, baby back ribs, etc.)
