Evidently, this is a MYTH that Red Velvet is just chocolate cake with food coloring. Real red velvet cake gets it color naturally through the... type of cooking/ingredients used (can't remember) and legitimately does have a different flavor.

Red Velvet Cake is supposed to get it's red coloring from a reaction between the natural cocoa powder and the acid in the vinegar (or buttermilk). There is a reaction and it is kind of red, but it isn't red enough for a lot of people, so they add a lot of red food coloring. Red Velvet tends to have less cocoa than most chocolate cakes and has a bit of a tang to it. Honestly, it's a bit like a milk chocolate buttermilk cake that has been dyed red and I'm okay with that. But you can use beets to give it its red coloring if you prefer.

The color comes from cocoa powder that has not been Dutch processed - as the other anon said, a chemical reaction brings out a reddish color from the cocoa. Since any random cocoa you pull off the store shelf might be Dutch processed or a mix of natural and Dutch processed, the cake won't turn reddish if you aren't using the right kind of cocoa and you would have to color it. This and the desire to make red velvet even MORE RED probably led to people thinking food coloring was always part of it.

I just think it doesn't taste like much of anything? I like my chocolate dark, and by necessity red velvet cake can't have a ton of cocoa in it or it'd br too dark to dye red/look red just from adding vinegar. Now, chocolate cake or cupcakes with cream cheese frosting can be delicious. I just don't think adding a bunch of red dye and a smidgeon of cocoa to cake batter makes for tasty cake.

I've never eaten the stuff but my brain and taste buds already seem to have some sort of negative association thing going on with it. Like just reading 'red velvet' makes me nauseous, idk how to describe it. Egh. It's probably actually great, for some reason the name makes me feel physically ill.

It's one of those cakes that is popularly slathered in cream cheese frosting. The base is... really inoffensive, which is maybe the point.

I wanted a regular store-bought cake, but my mother had just discovered red velvet cake and insisted on making a three-tier red velvet cake with cream cheese icing. It wasn't what I wanted and I knew nobody would want it, but she insisted. And it was gross and ugly and nobody ate it and basically fuck red velvet cake.

I sympathize, although by 15 I was 4 years past my parents telling me if I didn’t want to eat what they were having, I was welcome to cook what I wanted myself, because at 11 I went vegetarian. But growing up, I wasn’t allowed white sugar or white flour by my dad, so if my mom didn’t sneak out and buy a bakery cake, I was stuck with a carob brick of a cake. (Chocolate was harvested by child slaves and immoral, white sugar and white flour were empty calories and the corporations that produced them were evil, etc.)
