Coming from a slightly different perspective...

I considered myself a lesbian, 100%. I had several longterm girlfriends in a row, and absolutely zero interest in men. Until I fell hard for a guy in my early 30s, and we're still together now. If he and I were to split up, I'm sure I'd date women again, and I may never have another relationship with a guy. Or maybe I would. I don't really know.

My point is, if it can happen in real life, it can happen in fiction. There's no reason a canon gay person can't fall in love with someone of the opposite sex like I did. Sure, it might be incredibly rare, but it happens. Also, it depends on how someone handles it. If it's done in a "haha, they're straight now!" way, then I would definitely be bothered by that. But if a canon gay character had an opposite sex exception, and it was handled in a nuanced way, I would have no issue with it.

"It happens like it did with me"

You being bi with a major lean toward women doesn't mean that homosexual characters are bi.

ayrt

Except that's not what I said. If it's possible for me to think for 30+ years that I was completely, 100% gay and then realize I'm not, then it's entirely possible for that exact same thing to happen to a fictional character.
