I don't think she's plain. I do think there was a lack of the ethereal quality that movie!Galadriel and Arwen had. But then again, Legolas never had that. I think it is simply that you can't really capture elves completely in real life. And the movies have seem to want to go either the ethereal beauty route or the warrior route. When actually Tolkien's elves are generally both supernaturally beautiful and really badass.

I think that she's supposed to be a different 'kind' of elf, isn't she? And different kids of elves have a different look. I mean, Legolas and Galadriel, et all, were very pale with pale hair, and she's obviously of a different strain.

I rather like the difference but you're right, she didn't look the same. (I wonder how much of that was the lack of the same kind of filters/film tricks? I dunno....)

But all elves still look ethereally beautiful. Some more so (and it has nothing to do with hair color, it has to do with which branch of elves they are a part of. Galadriel is Noldor (the ones who are supposed to be the most powerful, most beautiful), Legolas is Sindarin/Sindar.) Tauriel is supposed to be Sindarin too, I think. So she should be at the same level as Legolas.

And some of the high elves have red hair. Maedhros is a redhead and he's a Noldor. His mother, Nerdanel, was also a redhead. And the most beautiful elf ever (according to Tolkien) was Luthien, an ancestor of Arwen, who is half elf and half maia (angel basically). She was inspired by Tolkien's wife and had dark hair and eyes.

So it is less coloring

Sorry. Basically, there are different types of elves. But all are to some level ethereally beautiful. And beauty and physical prowess aren't opposites. Some of the most powerful, most skilled elves are also the most beautiful. So Tauriel being a different type of elf doesn't mean she shouldn't be ethereally beautiful.

This is why her looks just added to the Sue factor for her in my eyes.

No, Tauriel is Silvan, it's mentioned when she and Thranduil are talking about Legolas' affection for her.

Maybe the ethereal look comes with greater age? I mean, in the PJ's version of Tolkien's world.
