I've noticed that use of whilst is much more ubiquitous in the UK and use of while is much more ubiquitous in the US (not sure about Canada or Australia). It may be that you're reading a lot of fic from UK writers.

I think it's one of those things where like... yes, it is reasonably common in the UK (and possibly in the rest of the commonwealth), which is fine, obviously. But the fact that it's a Britishism, and perceived as high-register and "sophisticated", means that it's also used by some Americans who want to write in a "sophisticated" way, and those people are probably pretty awkward.
