I found Sabrina herself interesting but I wasn't sure how likable she was actually supposed to be? Because girl you fucked up so much.
But then there was just a general undercurrent of 'shit's fucked yo' going on in the show.

She clearly knew the weird sisters well enough to a) know their names and b) not be surprised by their racism/cursing bullshit. Her aunts regularly make references to cannibalism (in such a way that makes me doubt Sabrina has never eaten human flesh before, actually), Ambrose doesn't sugarcoat anything. Zelda is clearly fervent in her devotion to the coven, and is actually pretty open about the horrible stuff she's asked to do, but somehow it's a great shock to Sabrina that yes, she too is expected to sign her soul over to Satan who's going to ask her to do horrible stuff.
In the end, what was supposed to make Sabrina a modern, socially-conscious, fierce young woman, just makes her look super hypocritical self-centered because she only cares about things when they personally affect her (or, you know, she's so self-absorbed she literally doesn't notice anything going on around her unless it's explicitly pointed out, which isn't much more flattering).
