Good red curry paste?

(Anonymous) 2020-08-12 09:27 pm (UTC)(link)
Hi, FS, I'm in the San Francisco bay area and am looking for a good red curry paste. Can anyone recommend one? Thank you!

I would guess the nearest Asian supermarket? Depends on where you are specifically, obviously, but it should be pretty easy in most of the Bay Area, the Asian population is massive and well-distributed.

Haha I should've said, I've gone to a couple of different Asian grocery stores and there were quite a few choices in both stores, and I was kind of lost as to which one would be best. It reminded me of BBQ sauce tbh, there's a lot of different BBQ sauces but some of them aren't that good, you know?

Thai Kitchen brand. I've heard people recommend it, and I've used it myself and it's very good!

Actually I used this one before and found it to be lacking in spiciness. :(

True, I suppose. I always add it in with heavy exaggerations to the spices I use. Though not too often since I'll use a whole bottle for one meal- by my norm, and it's not exactly cheap.

I guess I should be heading the advice of the anon's before me, tbh;; Most of the online recipes I find always show this particular brand, even when they try to hide the label, so I figured it must have been good;;

I love spice myself and I've been looking it up, so maybe this link might help?
https://www.thaitable.com/thai/food/tale-2-red-curry-pastes

It's an actual recipe to make the pastes from scratch, so since you mentioned there being authentic Asian markets around where you live, maybe you can find some of the produce needed to make the paste? (Sorry, this is actually probably no help at all;;)

SA- This Should Help, Hopefully?

"I also went with only green curry pastes and followed the same recipe for a curry with pork, green beans, and Thai eggplant to make sure that the playing field was even. The brands compared were: 1) Thai Kitchen, 2) Lobo, 3) Aroy-D, 4) Maesri, 5) Mae Ploy, and 6) Mae Anong."

&

"The results were as follows:

1. Somewhat surprisingly to me, all of the curries were ranked as being decent. There were definitely favorites, but overall, our friends decided that any of these curries would be passable as a Thai green curry.

2. The top three brands were Mae Anong, Mae Ploy, and Maesri. Mae Anong and Maesri were described as having smooth, round flavors with Mae Anong being slightly more flavorful than Maesri. Mae Ploy ended up being too salty for the boyfriend and me after the addition of fish sauce as called for in my recipe, but it did have a nice heat and depth of green curry flavor.

3. The bottom three brands were Thai Kitchen, Lobo, and Aroy-D. Thai Kitchen was described as having a somewhat unpleasant, slightly bitter taste, but still tasting like green curry. Lobo had a distinctive lime (but not kaffir lime) flavor and Aroy-D tasted more like an Indian curry with a prominent turmeric taste. These three were also less flavorful than the top three brands."

There's a lot of interesting information in the link, like how the Thai Kitchen Green Curry seemed to separate and whatnot! Just thought it would help some!

SA-...again;; maybe this with also help? Hopefully;;

I haven't tried it myself, so I'll admit that up front. That said... brands like Thai Kitchen are meant to appeal to white people who don't know much about the cuisine and are too scared to navigate an Asian grocery store. You generally will not find an actual Asian person buying Thai Kitchen brand unless they have no other options available because the quality is not the same (think toned down spices and flavor) and the price is usually 2-3x as much as something you'd find in an Asian grocery store.

That checks.
Honestly, when looking through many different recipies across the internet this was the major brand most people mentioned, even when they specifically didn't show the brand name, but still photoed the back of the bottle. (I should have realized that, much like the joke about adjusting recipes like they were written by a midwestern housewife who thinks even ketchup is spicy, that the authors of those recipes probably toned down their palate for their target audience) I completely agree that it's over priced though, for sure.

Personally, I live in a small town and don't have much options. The only other curry paste I have available in my area is the Blue Dragon brand which I'm allergic too, so I didn't feel comfortable reccing something I've never tried. With the online mentions I thought it was a safe bet, but I'll definitely be looking for the brands the anon's above mentioned on my next shopping trip!

Sorry for the misunderstanding guys, sometimes I get a little post happy it seems!;;

Hi. Not everyone lives in a place with an Asian grocery store.
