Easy vegetarian meals

I am trying to eat less meat (and make my family eat less meat). What are some of your favorite vegetarian recipes that are not just rice/pasta with a vegetable.

Stir fried veg with tofu
Vegetarian chilli with beans
Eggs in most forms make a decent veggie meal - scrambled, poached, omlette, frittata, boiled, etc
Homous and falafel wraps with salad in
Risotto (squash, beetroot and goats cheese, mushroom)

I should try tofu. Never cooked it so a bit worried about screwing it up!

I like it raw but I know that's a bit of an anomaly. It soaks up liquids, so marinating might help you get used to it.

This tumblr collects easy to make recipes, and vegetarian ones are tagged, so have at it! Low Spoons Food.

And if you want to put in some effort for "fake meat", Sauce Stache tries out a lot of things to see if they taste like real meat Sauce Stache.

And I can make some great vegetarian sausages, which are always a hit at parties.
Grate one or two carrots, add about the same weight in porridge oats, some chopped garlic, a teaspoon of yeast extract, some spices, and lots of ketchup. Mix it altogether and add more oats or ketchup depending on if you can make sausage shapes out of the mix. Form sausages, shallow fry them in batches, and then drain them on a kitchen towel. You can also make burgers using this recipe.

My main tip, as a lifelong vegetarian, is to avoid the meat substitution route. I have never, ever had a good meal with a product that is supposed to be 'fake meat'.

Veggie proteins that are used the world over such as tofu and pulses, look up traditional recipes using them. They're much better eaten 'in context' than thrown into meals you would normally have meat in.

Have you tried the impossible burgers? As a meat eater, they taste JUST like hamburger to me. Even look and feel like it.

I'm neither vegetarian nor vegan, but I consideraly cut down on my meat consumption, and honetsly - same. "Vegan meat" products probably lower the bar for people who are very inexperienced at cooking or have a very narrow list of foods they'll eat, but it is way more satisfying to eat tasty dishes with pulses.

Heh - I live with a nearly lifelong vegetarian for whom tofurkey and similar are near-lifeblood. When omnivorous me cooks for both of us using meat substitute, I tend to use them as more of a seasoning, but roomie loves them front-and-center in a sandwich (I think at least some of this fondness is from when they started becoming more mainstream and it helped a lot at work lunches and social events to not be handed unseasoned burger toppings for a meal...)

But agreed that natively vegetarian dishes are awesome and a really good place to start!

I like fake meat crumbles, but I usually just use that for, like, goulash. Who really cares about the ground meat (or "meat") in goulash.

Agreed. Forget trying to fake meat and just enjoy the veggies/proteins for what they are, they taste much better that way.

I'm a big fan of modifying recipes to make them both simpler to shop for and more to my personal taste lmao, so these suggestions might not be precisely what I use. That being said, these two of the base recipes I tend to use in my regular cooking rotation.

In addition, a friend of mine gave me a great "meaty" black beans recipe that's a bit more satisfying than just beans over rice. Basically it's a 2lb bag of black beans soaked overnight, stewed with a diced caramelized sweet onion in paprika, a diced spanish onion, diced celery, diced adobo peppers, 2 bay leaves, 2 jalapenos, olive oil, and a fuckton of garlic, plus pepper, cumin, and oregano to taste. He stews it over low heat for 2 days because he's a madman, but I've found that it's pretty much as good if you put it in a large crockpot overnight.

As you might have guessed, I'm vegan rather than vegetarian, but hopefully this is on the right track. You'll still want to have rice or some other grain with your meal, but these are a little more interesting than just beans or a veggie over grains lol

Damn, that black bean recipe sounds delicious. I wonder if you lower the liquid to eat it on tortillas and such.

Lots of Asian recipes use tofu and are delicious.

This soup has been the favorite of even my meat eating friends. I have used different squashes and prefer white beans than chickpeas but literally you can do any combination https://food52.com/recipes/31064-chickpea-pumpkin-and-sage-stew

It's also really easy to make vegetarian tacos. Instead of meat I've used various beans, humus, Avocado, or scrambled eggs (Breakfast tacos for dinner ftw).

Eggplant parmesana (or zucchini parmesana) is super good. We bake the breaded eggplants, instead of frying. Just remember to soak the eggplant in saltwater first.

Huevos rancheros is excellent. We use black bean mush, avocado, vegetarian green chili sauce, cheese, etc.

Red lentil soup. I think we got our recipe from the New York Times.

Vegetarian burritos are good, too. We use black beans.

Thai green curry with Quorn Chicken

Halloumi Wraps, Cook the halloumi however you like it, chop up some spinachs, spring onion, cucumber, few red peppers. Mix it all together, and bung it in a wrap.

Pizza (Mushroom, Pineaple, and Jalapeno topping) - Vegetarian only. Vegan pizza is a fucking war crime.

Toad in the hole with Quorn Sausages. Pretty much any meal that uses sausage is actively improved with Quorn sausages... except for hotdogs. No-one has perfected the meat free hotdog. But in most other cases Quorn sausages are better than real sausages.

Black Bean and corn Salad!

You can change it up as you wish, the original recipe I had calls for quinoa (if that's available where you are) and some other stuff, but I recently made a simpler version

1 can of black beans (drained)
1 can of corn (drained)
Squeeze some limes
Chop up some cilantro
And throw in some (red) onion

You can dress it up from there as you please! Add tomatoes, avocados,whatever you want! Add olive oil, some vinegar, make a new dressing. It's tasty and rather filling.

Also filling for the AM is overnight oats in yogurt with some fruits chopped into it. Super tasty.

Hahaha, until your last line I was going to be like, "well, I like experimenting with what I can put on rice."

Though seriously...I've been into making my own 'bento' style lunchboxes for work and one of the things I often do is make rice. I've made riceballs. I've made rice with furikake. Etc. If that's all I did it'd get boring.

So I've done stuff like: rice with some pesto and peas mixed in. A mix of rices (wild rice, purple rice, white rice) cooked with some aromatic spices (sorry for the rhyme) and then with pecans, dried cranberries, and raisins mixed in. Maybe sunflower seeds. Maybe black sesame. I recently did quinoa with dried blueberries, chopped pecans and a light 'dressing' made with maple syrup, water, and crystallized lemon (I don't keep regular lemons on hand because I wouldn't use them fast enough). Leftovers were tasty the next day heated up with some milk added. Anyway, I've done all kinds of different stuff, it's actually pretty versatile.

I make it easy on myself by using a rice cooker. I usually "boil" eggs in the steamer basket (one white rice cycle is just about the exact amount of time for perfectly hardboiled eggs, just take them out and drop them in an ice bath so they stop cooking quickly) to make that easy on myself too.

Of course, I'm not vegetarian so many times there's some kind of meat included somewhere but sometimes I go, "eh...egg and edamame is enough protein, right?"

Honestly vegetable curry is your friend. A lot of places do ready made curry sauces, mix it with your favourite vegetables and voile. As a bonus, Indian curries are a great excuse for naan bread. Thai curries are also super easy: coconut cream, a few spoonfuls of curry paste (my go to is green), some lemon juice and some sugar and you have a sauce for either curry or noodles.

"Mexican" sausage rolls which are basically mashed refried beans, corn, and red pepper in savoury pastry. The pie version of this is also amazing, especially if you put potato on top sprinkled with a bit of paprika.

Frittata is a good side/lunch dish, and it's just putting veges in an oven dish and filling the dish with beaten egg then baking it for thirty min

Roast vegetable salad with feta cheese is another go to for me, or you can use roast veges in vegetarian nachos (cut the veges into small cubes, roast them, then fry them with red/black beans and a sauce, then just construct as usual for nachos)

Honestly, almost all recipes can be made vegetarian. If you're worried about protein, use things like tofu and egg. Deep fried tofu is amazing, but if you're using tofu then trust me when I say you want something with a strong sauce that the tofu can soak up. Also look up vegetables that are rich in iron so you don't have to worry about that either.
