Great comment! I think the slightly-otherworldly, wise-and-fair qualities of Tolkien's Elves are difficult to show on screen. And I agree with what you say about them not needing to be "pretty". OP's secret honestly just seems like a personal preference (which is fine, people are allowed to have personal preferences). I think Hugo Weaving did a wonderful job of conveying the gravitas and weariness of late Third-Age Elves. And I love the scene where Galadriel and Celeborn are introduced and much of the Fellowship has a hard time meeting their eyes because they're in such awe.

I get that Hugo Weaving doesn't scream Elf to most people but I appreciated the Dad Vibes he gave off, especially since he had so many scenes with Arwen and Aragorn. If Elrond had been cast younger I don't think it would've worked -- even if we're supposed to understand that he's older, our brains don't work that way.

And honestly, these retroactive takes all seem to imply they could've gotten anyone they wanted at the time, but when they were setting out to make these films it was a huge gamble. Nobody knew it was going to turn out so well. The multi-year commitment to film in New Zealand probably didn't help. For some of these non-major roles, they definitely went with actors PJ & co already knew or were locally available. It's life.
