I have rediscovered the joy of cooking with red potatoes.

Drizzled with olive oil and fresh cracked pepper, grilled with both yellow and green onions plus jalapenos. :D

Think I'll try red potatoes with rice wraps next.

I discovered that there's no reason to cook with russets or any other type of potato unless you're making baked potaoes. Chunking or slicing potatoes for roasted, grilled, or any other iteration, you might as well use red vs russet, they just taste better and are reasonably priced. I have never used yellow or "gold" potatoes, it seems like an unreasonable price difference for zero taste difference.

Red potatoes are also apparently really nutritious too. One of the best sources of potassium and Vitamin C.

Gold potatoes actually do taste very different, they're very buttery and make amazing mashed potatoes.

red potatoes are great because you don't even need to peel them, the perfect potato for the lazy cook such as myself

I'm getting paid a lot more ($5 more) with my new position. It's still a few dollars under the minimum of what I should be paid for my title but I'll happily take the extra money, actually stunned I was able to get such a big raise.
