I'm open to anime, but there's so much of it - any recs?

that depends much on what you like tbh.
Theres the usual popular crowd anime (hope those actually relevant still): demon slayer, jujutsu kaisen, tokyo revengers, Boku no Hero academia
Then the "older" classics, with newer additions/new animations/new seasons: Naruto, Boruto, Inu Yasha, Fruits Basket, Sailor Moon.

If you got access to crunchyroll (we have a love-hate-relationship) you can check out some things there.

(Anon from yesterday didn't check here before, sorry! But since you're logged in I figured there'd be no problem in replying.)

Well, it depends on what you like, really. You can search series by "genre" or "theme" on MyAnimeList - https://myanimelist.net/anime.php
In "demographics", you may want to pick Josei if you're into "J/K-drama" types of series. They're series originally aimed at "older adult women". Personally I find that they're... shorter and less cliche than most J/K-drama. I trust MAL scores *generally* (keyword: generally) so I would sort by Score (button on top right of each list) and check series' synopsis.

If you'd like to know my personal recommendations, hmm...
On the more realistic side of anime I really enjoyed:
- Barakamon - hardworking Shodo (Japanese calligraphy) prodigy city boy goes crazy and is sent to the countryside to recover, hilarity ensues. (12 episodes)
- Honey & Clover - group of college students in an Art department growing up together, love stories and whatnot. (26 + 12 episodes)
- NANA - young adult "prep" girl moves to the big city, befriends and starts living with a rock singer and hang out with her crowd etc. Quite dramatic. (47 episodes)
- Fune wo Amu - adults working together to make a dictionary, very... nice and chill? (11 episodes)
- Hourou Musuko - preteens trying to understand gender and how they feel about it (11 episodes)
- Tokyo Magnitude 8.0 - a destructive earthquake leaves many homeless and lost, a young woman joins two kids in searching for their families (11 episodes)
- Sakamichi no Apollon - in the 1960s, a trio of high school students are united by their passion for jazz music (12 episodes)
- Showa Genroku Rakugo Shinju - dramatic story involving two siblings across the decades and their love triangle ; this one probably requires a deeper understanding of Japanese culture, but it's very interesting, from the perspective of someone who knew NOTHING about rakugo or Showa (-1989) era Japan before watching it. (13 + 12 episodes)
- CLANNAD - a silly teenage romantic comedy that becomes something else, think La Vita è Bella (but I am reeeally trying to avoid spoilers here). (24 + 23 episodes) ; as a side note, I love this Studio so much that I thought of recommending many other series of their (Tsurune, Hyouka, Free! ...) but I believe this is one of their most popular.
- Netjuu no Susume - 30-year-old-NEET and MMO addict woman falls in love and is super awkward about it. (11 episodes)
- Kuragehime - young adult shut-in girl is unexpectedly joined by a pretty woman, who turns out to be the rich son of a politician, who wants to help her achieve her dreams (11 episodes)
- Ouran Host Club - silly teenage romantic comedy where a poor girl with a merit scholarship in an elite school is mistaken for a boy and ends up with a finantial debt that forces her to hang out with a bunch of crazy rich guys. Silly/funny, a classic. (26 episodes)
- Aoi Hana - girls who were childhood friends reunite in high school and realize that their feelings have changed, romancey stuff (11 episodes)

And now... for the less-realistic ones.
- Full Metal Alchemist - ah yes, the classic of alchemy (tm) . There are two versions (the original one and Brotherhood) that tell the same story in different ways. I like Brotherhood better but to each their own. (51 / 64 episodes respectively)
- Shiki - mysterious things start happening in a peaceful rural town, like... vampires? Locals try to understand what's going on. I LOVE this one. (22 + 2 episodes)
- Psycho-Pass - in a strongly hierarchical, meritocratic society where people are scanned 24/7 for their criminal records, a talented young woman joins the "enforcement team" to fight for justice and fairness (22 + 11 episodes + 1 movie)
- No. 6 - in a strongly hierarchical, meritocratic society (...) a "criminal" teen basically digs his way into the house of a privileged teen, and they end up becoming (more than?) friends and fighting the system. I LOVE the novels for this one, the anime is alright too. (11 episodes)
- Tiger & Bunny - "heroes" funded by businesses fight criminals and such on TV for the right to get more airtime (/higher pay) and then things Get Serious. (25 episodes + a second season that's currently airing and will probably have 25 episodes too)
- Fate/stay night: Unlimited Blade Works - another hugely popular series, this one based on a series of "visual novel" games. It's about a war for the Holy Grail so there is action and a lot of drama (12 + 13 episodes)

.. 'kay this is a lot already and I gotta get going. Sorry, I think I got carried away lol. My synopsis aren't the best, but maybe that was enough to make you interested in some of them! If not, do try searching on MAL. Hope that helped :)
