As a smut writer, I think it plays into the whole "touch, sense, smell, taste" element of sex, as well as foreplay.

Before you fuck, you build up tension. Instead of sucking a dick, you suck the tip of the thumb. Give the receiver preview to the skills of the giver by having the giver suck on the receiver's finger(s). Passionate lovers have to heighten their lover's senses so finger sucking (giving and receiving) is a quick way to do it.

As a writer, writing the same sex stuff can get boring. Sometimes the best subtle ways of changing things up is in the foreplay. Fingers are part of the body we use often and easily.

Maybe a lot of smut writers are getting similar ideas in their smut? NGL I get a lot of inspiration from the porn I read and watch so maybe a lot of us are sorta taking notes from each other's works?
