In the easy modes, you can just beat everything with barely any effort.

Exactly, and that's not what I want. Not wanting to have to spend two hours leveling up before I can even hope to go up against the next boss doesn't mean I want that boss to be easy when I do fight it, I would just prefer not to have to put in that two hours of grinding first.
