I have had people comment that something I wrote in a fic was contradicted by Deleted Scene X. I always reply that as far as I am concerned deleted isn't canon, particularly if the deleted scene changes plot or relationships. I assume it was taken out for a reason and I go with what is in the finL product.

Unless I don't. So I'm not criticizing anyone who views it differently.
