Corin the Stormtrooper in the Mandalorian. I just love when a OC gets so popular other people write fics with him. There are 200+ fics with him.

As mentioned in the thread to the comment, the Outriggers by AT Jackson are just really fun characters. It's a couple of old fic in seaQuest fandom and I'm not longer interested in the fandom but once in awhile I still get the hankering to re-read those fic.

I forget it now, but I remember reading an outsider POV fic in Teen Wolf where it was a whole group of characters that knew Stiles at college and were afraid he was in an abusive relationship because Derek (or Scott?) would show up and he'd come back with bruises. I think it ended with them learning about the supernatural, but it's been so long I really can't remember too many details of the fic. I just remember liking the OCs and being surprised that I liked a fic that was 90% OCs.

Hookers and patients in House MD fic - there are so many that feel like they could be canon and I especially like the ones that let the hookers be people with actual personalities.

Mutants in X Men fic as long as they’re minor characters, especially new students at the school mixing with canon mutants.

Any of the Saiyans in the fic Vejiitasei Ascendant. It’s an amazing AU with a ton of OCs but might be the best fanfic I’ve ever read.

I can't remember exact fics, but early on in the fandom, I remember reading some genuinely nice (at the time) Transformers OC fics, haven't read many since. I've also stumbled recently through Bionicle OC-centric fics that are good, but these are less about the OCs and more about spending the world, which is what I like from OC fics, exploring possibilities that the canon wasn't able to explore.
