I like the idea of a guy who's always been into women (until now) and a guy who's very reserved when it comes to romance and emotions getting together, just a fun shipping dynamic. I always thought of Edgeworth as gay tbh, but I can see where you got your reading. But I don't think there's any deep reason for it being popular except people like the characters separately and like them together. They're handsome guys with an interesting dynamic. If you prefer ships with more canonical backing, I don't think any of this will convince you otherwise. It's always annoying to not be into the big fandom ship, I've felt that way in a few fandoms myself.
