I don’t know where you live or where you hike but you might want to look up Alpha Gal Syndrome. It’s an autoimmune response to a carbohydrate found in mammals except humans and some apes. Your symptoms sound identical to several people I know with it. I have it but my symptoms are totally different. It’s a very strange condition that’s so different for each person.
If you can go to a clinic that accepts personal payments, they should be able to do the blood draw and get the lab results to you.

ayrt - I am vegan so not sure if this would apply to me but might be worth a blood test just to rule it out. Ty.

If you eat any processed foods, they most likely have cargeenan which is vegan. It isn’t the exact same carbohydrate but it’s so close that a lot of AGS patients react to it. Also, not everything claiming to be vegan is actually vegan (in America, can’t speak to anywhere else). The ingredients are often processed with animal byproducts but because they aren’t included in the final product, it’s considered vegan. Pretty much anything on the “accidentally vegan” list isn’t, like Oreos. The sugar is sourced from many distributors and may or may not be processed through bone char.
