(Anonymous) 2024-12-03 01:31 am (UTC)(link)1 lb chicken of choice (thigh is preferred, but I hate cleaning and cutting thighs so breast for me), 4-5 cups chicken broth (the 4 cup box is easiest to just dump in), a small knob of fresh ginger minced, 2-4 cloves minced garlic (from a jar is easy), 1 small onion diced, 1 cup rice, 1 T fish sauce, 1 tsp black pepper, a splash of calamansi juice (if you can't find easy packets of juice or concentrate at an asian market, sub in lime juice). Optional fried garlic and cilantro for garnish.
Dice up the chicken into soup-sized bites, brown with the onion, ginger, and garlic (put the garlic in last if you're not using fresh cloves). Add fish sauce and pepper, then stir in the rice to let the spices and oils coat it (only about a minute so it doesn't burn). Pour in the chicken broth, stir to let all the browned goodness on the pan mix in, then lower heat to a simmer and cover. Simmer about 20-25 minutes until the rice is tender. Add the calamansi (or lime) juice at the end. Top with crunchy fried garlic bits (also from an asian market, in a jar) and cilantro as desired.
Excellent for cold days and when you feel like shit, the garlic and ginger do the sinuses good. Don't skip the calamansi, the citrus flavor balances the thick savory caldo texture. I omit the onion these days because I have an intolerance but never leave out the garlc, you can't stop me body.
