Miso Soup!

Just really need a good sized pot, some hondashi soup stock, some soft firmness tofu (you could use medium, but I do NOT recommend going the other way and using silken), seaweed sheets (i recommend the ones roasted with sunflower oil), and shiro miso paste. Green onions optional, but I always like them as garnish. I usually eyeball it mostly depending if I want a more savoury broth or a less salty one, but I just put enough hondashi in to give the water that touch of umami, then I dissolve about two BIG tablespoons of miso in it, then add the tofu (cut it into cubes). I put the seaweed in last, just kinda cut them up into little squares bigger than the tofu cubes, and let it simmer for a bit. If I'm feeling fancy I'll toss in some frozen dumplings and cover for about five minutes, they usually cook pretty fast in the pot. Put into bowls, add chopped green onion, done! HELLA easy and quick.
