Not always the perfect mentor, but Rupert Giles from Buffy is a great character. Trying to mentor and supervise teens who really don’t want to listen to him and having to just roll his eyes and sigh when they continue to do stupid things.

“Charlie Burton” comes to mind. Guy was such a good English teacher one of his students instantly stood up to armed mobsters to protect him. (And he managed that while having a completely separate organized crime agenda running in the background.)

Yeah, he was great. And played by the always on form Enrico Colantoni (who was also Veronica Mars's dad, another great mentor).
