Do you mean in fandom (with trans headcanons and/or how canon nonbinary characters are written in fic) or is this about nonbinary characters in original fic?

I find it annoying myself when authors seem to think all nonbinary people are the same, or if the way they write a headcanon feels OOC, but I don't know the character in this secret or what fandom/s or canons you're seeing this in, so it's hard to say if I've seen the same issue you're talking about.

Nonbinary is often an awkward character label tbh, because all it's saying is ... not-binary. If a character is described to me as nb I don't know what to expect because it could be anything-but-binary. Describing a character as 'binary' tells you equally as much which is not much at all because binary gender can be expressed in a ton of ways too.

But people tend to just toss out 'nb' and I'm like 'yeah and...?' and they're like 'no theyre just nb that's the end of the description, you're supposed to be able to imagine their gender from that one word' and I'm like ???

I've often chuckled to myself wondering how these types would respond to "genderqueer" - because the overlap of what you're describing and "qu**r is a slur how dare you" is strong.

The thing that bugs me is that a NB character/person could still be described as binary. Like I know a person who IDs as NB but they 100% present as a "normal" female woman. So NB really is a nothing label. It could be non-gendered, agender, gender binary presentation but not liking the labels, anything!

And before anyone comes at me for anything, I am 100% in support of people IDing however they want and have nothing against anyone who self describes as NB but still presents as typical of their assigned at birth gender. It's just a frustrating discussion for representation in media sometimes.
