I've always maintained a small stockpile of shelf-stable food, just because I get lazy or careless and sometimes end up having to put together a meal last minute. And since COVID, I make sure we don't get too low on toilet paper and toiletries in general before I buy more.

I'd say that if people plan on eating more beans/legumes, consider stocking up on herbs and spices as well because those aren't likely to get any cheaper, either. I'm actually considering buying a pressure cooker or instant pot because they're supposed to be pretty good at cooking dried beans/legumes without taking hours.

I love my instant pot. It works incredibly well for exactly the reasons you stated.
