I didn't pay that much for it at my local Asian market, it was less than $2 IIRC. Basically I sauteed a sliced onion in some vegetable oil first, then added the curry paste and fried it for about a minute, then added a can of coconut milk (don't get the lite kind, you want the fat for creaminess) and maybe 2 lbs of boneless chicken thighs cut into pieces, some peeled and diced carrots and potatoes. Add more water if there's not enough liquid to cover your meat/veg, and oh yeah, some lemongrass if you have it. I used about a Tbsp. of chopped lemongrass, also bought frozen in a tub from the Asian market. Bring to a boil, then turn down the heat and let simmer about half an hour or until the potatoes and carrots are tender. A reddish oil will start separating from the rest of the sauce when it's done, serve over rice.
This was moderately spicy to me, though I guess if you added another can of coconut milk that would help tone it down a little. Pretty darn good for home cooking, I'm not a skilled chef by any means and this was my way of trying to satisfying a craving for Thai curry without blowing my monthly food budget. Would definitely cook it again.
