I never did make it past the first few episodes of that. But maybe the reason it's "quintessential yuri" is because there's such a small pool of yuri to pull from anyway! That makes all yuri quintessential yuri in a way.

Look at yaoi, there's a bit more of it now, but people still love shit like Okane ga Nai and [Insert Shitty Over-Hyped Yaoi Title of Your Choice].

Simoun has some shoujo ai but it's mostly focused on other issues but I really enjoyed the plot and world. I think it'd count in the yuri category though. There's also Sailor Moon, and that's all I can think of of the top of my head because I don't watch much yuri/shoujo-ai.

Let's see here, when it comes to anime... There's not a lot to choose from.

Well, besides Utena, I can think of Puella Magi Madoka Magica and Maria-sama ga Miteru. They're not yuri exactly, but I would definitely say both are strong shoujo-ai series (and the latter has lesbian & gay characters in it). Also worth mentioning is Mnemosyne, which is yuri, but has a lot of BDSM, violence and gore in it. (The main couple is portrayed sweetly, though, no violence and gore there.) There's also an OVA called HEN; unfortunately it didn't get a full anime season and it starts out as het (the manga is worth checking out if you want to see the lesbian action really take off). If you're into crack, there's Re: Cutie Honey (the 2004 version).
My absolute favorite is Rose of the Versailles; unfortunately everything is either sub-text or one-sided.

(Oh and just to clarify, the Hen series is based on the manga by Hiroya Oku. The OVA is hard to come by and is not to be confused with Hen Zemi.)

Hayate X Blade, which I cannot believe has like NO FANDOM. I know it's not exactly at "Strawberry Panic" levels of obvious but GOD FORBID a yuri series be executed with a sense of fun and class and subtlety.

(In that vein, Strawberry Shake Sweet cannot be recommended more highly enough, as a screwball adorable rom-com.)

Nanoha - Gayest magical girl show ever. Excellent fanworks and doujinshi. Watch the movie instead of season 1 if you can. Season 2 is amazing. Season 3... is really gay. It's all very gay, really. And badass, for a magical girl show.

Strawberry Shake Sweet (manga) - best romantic comedy yuri I have ever read. Very compelling and hilarious.

Madoka Magica - very gay by the end. Also, trauma. Messes with your head a lot.

Also check out the webcomic girlswithslingshots.com for a surprising amount of lesbian and lesbionic side characters. It's awesome.

the LJ community daily_yuri (http://daily-yuri.livejournal.com/) would also have a lot of good recs on it. You can read Strawberry Shake Sweet on there too.

I can't believe no-one's mentioned Oniisama E yet. It's an oldie, but a goodie. (And even if the GL isn't the main focus, it still has loads of it.)

Oh and there's a lesbian couple in Loveless. Even if they only appear in a few episodes, it's totally worth watching (IMO the best part in the entire anime series, even though I'm usually more into BL than GL.)

Utena is definitely one of the best yuri works out there (even in the manga, which tries so hard to be heterosexual). And then obviously there's Sailor Moon, which has a lot of subtext aside from canon Haruka/Michiru. Also:

- Strawberry Shake Sweet (AMAZING)
- Girlfriends (not my favorite, but not terrible)
- Love DNA XX (see above)
