IA. He might not understand human culture or job procedures (like the FBI thing), but once it was explained to him he could probably do anything.

Also...part of the reason those librarian/housewife/priest/etc AUs bug me is because I can't imagine Castiel being satisfied with something so mundane. Cleaning houses, sorting books, and baking cakes (all while waiting for Dean to come home from whatever it is he does during the day) doesn't sound like something he'd be happy with. He'd probably want to be in the midst of the action, being a soldier or a policeman or a...I don't know...a freaking kickboxer! Hell, a missionary would make more sense than a priest. At least then he'd get to fly all over the world helping people.
