And this from someone who stopped watching at the beginning of season six because I kept forgetting to set the DVR and the quality seemed kind of...lacking. It was actually the Leviathian storyline that brought me back in (so much yes to the person who pointed out how great it is when they interact with the law) and made me realize i just can't quit SPN.

I'd only rewatch the first three seasons primarily because I own those episodes on DVD (easy access), and because I hated the fourth season something terrible. I eventually stopped watching somewhere early on in the fifth. The apocalypse storyline wasn't terribly appealing to me, I hated the angel characters like nobody's business, and don't even get me started on new Ruby and the whole blood addiction nonsense.
Sam and Dean stopped being the Sam and Dean I'd known when I first started watching (don't get me wrong, character development is a good thing; I just didn't like whom the boys had become), and as formulaic as they could get at times, I really enjoyed monster-of-the-week episodes. I liked seeing what sort of mythology they were going to tackle next. I hear the seventh season is closer to what I remember liking from the first season or two, but I can't bring myself to waste my time wading through the slew of episodes I know I'll hate just to have some idea of what's going on. :(

I've only just finished season two, but I think it's kind of nice to have a fall-back thing to put on when there is nothing good on TV...or when I just want some comfort food TV. If the episode isn't one of my favorites I just go clean the bathroom or something and check in if it seems like something good might happen :-)
