Why the hell would a ship full of humans blowing up affect Spock's growing up and behaviour?

I would say that the difference would be that everyone is aware of the connection between Romulans and Vulcans much, much earlier than in TOS, and the way that they found out probably lent itself to a lot more paranoia and backlash against Vulcans. As the son of the Vulcan ambassador to Earth and being half-human, that would definitely have an impact on Spock and his upbringing. He didn't exactly have an easy time in the first place with his mixed heritage, but the atmosphere following Nero's attack on the Kelvin probably amplified that. I'd also say that the change in tech and the ripple effects of the Kelvin tragedy could have affected policy and changed the world overall, which could explain changes in the lives of the other character. Overall, it just feels like a harsher world than TOS.

However... they don't really do a lot to establish that in the movie, and they cut out some scenes that fleshed things out/explained things a bit better that were in the original script. So, yeah, I can totally understand people's gripes with the character changes between TOS and Reboot.
