Without spoiling, Jak does go through character development in Jak 2, so his angst state in Jak 3 peeved me off because it rewinds it all back.
"and I heard how Baron Praxis did Dark Eco experiments on him, so I was expecting it to be more elaborated on. When I finally started Jak 2, and all it said was 2 YEARS LATER, I was a bit miffed, tbh."
I guess it's handwaved in the context that Naughty Dog wanted to make it "darker and edgier". I've always hate it when people turn something that was originally lighthearted into dark, angsty, violent crap because oftentimes, it doesn't work. I was 17 when Jak 2 came out, so maybe there's some nostalgia, but I think Jak 2 did the "darker/edgier" thing fairly well. Mainly because the story and characters are excellent and prior, there was only one Jak game and it barely had a story (but you can tell it had elements to world-build it). I do miss the colorful worlds though. People can criticize "The Lost Frontier" all they want, but I think that game is arguably the closest to the first one and I liked that aspect.
"Lol, I loved that you hate, cuz I thought it was the funniest thing ever. That was definitely something I never expected."
The commentary in Jak 3 made it pretty clear the Precursors = Ottsels was a retcon purely for the third game. I don't really like it.
"(Although I wasn't a fan of that love triangle aspect in Jak 2. Really, guys? Do you have to resort to such unnecessary conflict and make 2 girls fight, when they can be awesome on their own? If they're gonna do character development, they might as well go the whole way)"
The love triangle in Jak 2 is really Keira/Jak/Erol. Ashelin doesn't flirt with Jak at all (she merely compliments him and there's a reason why she doesn't feel anything for Jak, but again, that would spoil). Keira is the one who suspects and jumps the gun by assuming something that isn't there. Ashelin doesn't even fight back; Jak jumps in and puts a stop to it. It's the only time this occurs and I can assure you, there is no Jak/Keira/Ashelin love triangle in Jak 2.
"I still enjoyed the gameplay very much, and I LOVED the plot point with Damas. Although, I hate how my sister took one look at Damas and said "That's his dad", so I didn't get to feel that surprised moment. And I never plan playing Jak X, since racing games don't appeal to me."
I would have liked the gameplay fine if Jak 3 was mostly fixing the issues Jak II had. It improved, but that's all it did: it improved, but didn't stand on its own grounds. Then again, I tend to dislike third games in a trilogy - it's a reoccuring pattern.
As for the Damas thing...honestly, I saw that coming. It was pretty blatant by the time Damas questions if Jak has a father and he replies that he doesn't.

I've only listened to the commentary once, so I'm gonna go back to look for when they mentioned that. I can see how you'd hate a ret-con. If they thought of it from the start, I'd love it even more.
I just assumed, based on that one scene so I'm glad it's not happening. I'm kinda curious to see how Errol goes about it with Keira, so I'll try to finish the game quickly.
Yea, that was the one scene she saw. I didn't notice, but I normally don't bother with guessing how a story will turn out cuz I like surprises. Also, I'm usually more wrong than right.
