Hadn't pretty much all the elves left for the Grey Havens at that point? Or am I crazy? I haven't read the books/watched the movies in a while.

Yes. The movies kind of screw it up by adding them to the Helm's Deep battle and then ignoring them from then on, when OP is sort of following a logical train of thought where if they cared enough to help with one fight, why not stick around for the whole war?

Ahhh, that makes sense.

I always assumed it was because most of the elves that wanted to help and fight died at Helm's Deep in the movies.

Lots had, but there were still significant kingdoms in Mirkwood, Lothlorien, the Grey Havens, etc.

Mirkwood and Lothlorien were busy fighting Sauron's forces on that side of town, though. It just wasn't given a prominent mention.

I think a lot of those left in their lands were too busy defending their realms. They were under attack from Sauron's forces as well - Lothlorien was on fire, if I recall correctly.
