...Is it bad that part of me wonders if this is at least partially a more specific response to the "All Disney movies suck because Studio Ghibli movies are the most awesome EVER" secret that was around a few weeks ago?

As for Sophie at least (haven't seen the others), it seemed to me that we were supposed to think Sophie kind of had a history of, if not specifically letting things happen to her, not fighting them kicking and screaming (cue the soldiers on the way to see her sister before Howl showed up) going into the curse being put on her. Having the appearance of an older woman who was past the part of her life when society expected her to conform quite as much to their behavioral expectations of her seemed to me to be very freeing for Sophie to act out against what was happening to her (or Madame Suliman on Howl's behalf) in ways she wouldn't have before.

Or at least that was what I got out of it. *shrug*

Exactly this. You see this in a more detailed fashion in the book, but it's pretty clear in the movie if you pay attention to the occasional dialogue points - Sophie was something of a doormat in the beginning, but once everything went tits up around her and she realized no one could expect anything from her as an old woman, she was free to do as she pleased. (She also started getting very angry about her pushover tendencies.)

To your small text: it could be, yeah--but, I don't know, we see this sentiment pop up fairly occasionally. The Disney vs Ghibli sentiment, that is.

I agree with your interpretation on Sophie--I think the issue was that her character was not communicated well. It was very much an adaption movie, the kind where you can tell things got lost in translation from the book to the movie. The fact they spent no time with her before she meets Howl made a lot of her character get lost in the film. You barely spend any time with the "true" Sophie. Mostly it's the old granny Sophie who does not actually act like the young Sophie at all, and might as well be a different character for it.
