There's mainly a difference taken from it OP because same sex couples are rarely canon. Even taking into account hetrosexuality being more common it's well, very unrealistic with the really low number of canon same sex pairings out there. It's also depressing to consider the fact stupid-ass parents mean same sex pairings in things aimed at those under 18 are even more unlikely. Because 2 girls or boys kissing is totally on the same level as soft core het porn- if not hard core depending on the bigot. In many ways fanon pairings are the only way some people are going to get a same sex couple in the media they like at all. This can be a fun way for people to explore relationships. Even learn what does and doesn't work in discussions etc.
Of course I'm not going to pretend that slash fandom is all rainbows and about tolerance and getting more equal representation (lol, slash fangirls can't be homophobic? Pfft) but eh, slash and femslash fandom is giving us something we don't get a lot of in canon. Even if some of it is hardly stellar.
Taking a gay couple which is canon and making them straight is more skeevy because honestly the canon is EVERYWHERE for het couples. There's nothing wrong with hetrosexuality or shipping het but it's a rare thing for non-het CHARACTERS to exist- and even then sometimes they are left utterly loveless a lot of the time. Slash predominates fandoms so much not just for fap material I think but because canon usually fails to fill those urges to see fictional people of the same sex make out. Het hardly has that problem. It never really has in canon.
Also Hetrosexuality is taken as the default anyway- but honestly even when someone is making out with the opposite sex, bisexuality exists as others point out. A character usually won't state outright they are hetrosexual. They'll just make out a lot with a member of the opposite sex. That doesn't stop someone from imagining them being able to make out with the same sex if said couple broke up. With gay characters they tend to state it outright usually that they are gay in the narrative. Hetrosexuality can come from word of god or be heavily, VERY heavily implied but not confirmed in actual canon. So there's more room for that sort of thing too. As well as demand.

I sometimes love the concept of fantasy worlds for this reason: you can potentially get worlds where there is absolutely no homophobia/biphobia at all or it's only something really out there cults would get into if even that. I mean why not? In a fantasy world you can have ENTIRELY DIFFERENT GODS AND RELIGIONS shaping societies and thus attitudes. Also if they're interactive gods they might keep a close eye on the interpretation of their holy texts. And if they're actually dicks, people in fantasy can sometimes admit their gods are dicks.
It's actually pretty easy to imagine a world where homophobia is not really an issue. And heck in such a world we can also imagine misogyny isn't that major an issue- since they can often be connected. Homophobia can be based on an over-reliance on sticking to hard and fast gender roles in hetrosexual relationships, thus thinking other kinds of relationships can't work for this reason.
And I think if a straight man can have an interesting conflict in a story so can a lesbian without some dudebro in the background saying she needs to get back in the kitchen and find herself a good man when she brings out a decent sandwich.
