Het is a bit of a rare animal in my current fandom, SPN, but I attribute that to the fact that the series really has only two stable characters, both of whom are hot males. There's also the semi-regular third guy who has given shippers who don't like incest an option that isn't RPF. There's also issues that the show has never been great at portraying women - at least women who are romantic options (the women in non-romantic roles tend to be kick-ass gals). Suffice to say, it's a fandom that you should expect to be 90% slash.
Meanwhile, Harry Potter. Yes, it has it's fair share opf slash, but go into the right areas, and the right pairings, the het is still going strong. (I read Harry/Hermione. Also, I get the impression Harry/Ginny and Ron/Hermione are going as strong as ever too.)
Still, back when I first got into HP (between the release of GoF and OotP), I resided down the slash end of the fandom, and if it wasn't for poking about some of the big fandom archives a bit and hearing about the big ship wars, I probably wouldn't have seen anything from the het end of the fandom.
So I'd say that if you really think het doesn't exist, then it's an issue of what fandom, and where in it you are residing.
