I would like to see an actual, well-fleshed out, Asian male protagonist, who's not a stereotypical martial artist nor a replica of a K-Pop boyband member, appear in a game produced in Westernised countries.

In short, yes. A fashionable, well-dressed, "pretty" Korean male character can count as an "actual, well fleshed out" character. Depending on what demographic the character is supposed to be from, it might be pretty realistic to have them look that way.
*of course it varies by demograph etc.

And I'll add that spiked hair is actually extremely popular in Japan. Fine, they don't look like Goku, but the style is similar - only less ridiculous.
I think it's interesting that there's this reactionary image of what an Asian should look like, which really expresses Western perceptions more than Asian ones...
