I think some people tend to underestimate the role that Uhura played in the movie. Yeah, I would have loved to see more scenes of her being a linguistic badass, but if it weren't for her being so capable when it came to languages and picking up the message from the Klingons about their ships being destroyed by Nero, then Kirk may not have realized that they were walking into an ambush or been able to convince Pike of as much. She also helped serve as a grounding force for Spock, who was going through some pretty major shit since his entire planet essentially got fridged. Spock wasn't really close enough at that point to any of the other crew members for that kind of relationship to have worked with anyone else. It didn't necessarily require that his relationship with Uhura be romantic and not just friendship, but as someone else pointed out in a previous comment, the fact is that women of color don't generally get to be romantic love interests in movies like this, so that is a degree of progress of its own.
