Firstly, assuming that it is set post-Avengers, post-Coulson-Death, as opposed to pre-Avengers, or in another universe or whatever.
Unless it was an LMD that stepped in to face Loki, Coulson's death scene is still a powerful moment. It's still a moment where a mortal man, pushing fifty, walked into a room, well-aware that he was probably going to die, and politely took on a demigod with an untested BFG. He still got stabbed. He still got in the last word and the last shot after being stabbed in the chest.
Bringing someone back is cheap if it leads directly to sunshine and daisies. If it leads to More Conflict, then congrats--Add More Conflict is pretty much the primary recipe in story writing. And if Coulson shows up alive in the movies again? It will Add More Conflict. The Avengers already don't trust Fury, or even like SHIELD all that much. If Tony and Steve find out that Fury lied to them about something like that and played them with those cards and that speech, they will be pissed. Honestly, best bet is they find out right before/in the middle of a Crisis Moment, and it's what prompts them to just cut all ties with SHIELD right before some Really Big Bad hits. By the end of the movie, the Avengers have all learned to work together, in spite of their differences. But it was their conflict that drove the movie; so in the sequel, a lot of that conflict gets shifted onto the Shady Government Organization.
It still really doesn't "negate all meaning from his death" even if they don't go that route. Whether or not he comes back, that was a freaking sweet scene.

You love this movie so you've convinced yourself anything Whedon does to it can't be wrong, with the result that you can't see anything objectively anymore. Which is that Whedon pussing out on Coulson's death would be lame as fuck, the end.
