Since kids' stuff is still made by adults, there's often a lot of complexity layered into it that kids aren't going to spot unless they're extremely precocious. On its face, most of it is simple--but there are more layers in much of it. I don't watch it, but I know MLP:FiM has a lot of layers to it that do appeal to adults, and the showrunners can tell stories about deep friendships and so on without having to worry about including adult themes and romance.
So they're not necessarily simple, they just rely on different themes and don't get caught in the trap of 'who's going to date who' that so many adult shows/sitcoms get stuck in.
Another thing is, since a lot of them are animated/CGI/puppeted/etc. they can have much more dynamic character designs than simply casting actors would allow for. (This is also a reason I watch sci-fi, granted.) Talking animals? Sure! There's nothing stopping them. Plus animation is (I think?) cheaper to work with than fantasy/sci-fi because you can just draw in whatever. So they can take more risks with design.
