She's not a "real" princess because she wasn't born into a royal family, OP.
(Still one of my favorite animated characters, though!)

Cinderella, Belle, and Tiana were also born of commoners, but they married royalty. Sally and Jack are a couple, and Jack is the King of Halloween, so Sally could become royalty

Wouldn't she be a queen then, though? If they had a daughter, she would be a princess... and now I totally want a sequel about that (:

Well, it's extended canon that they have a bunch of skeleton children. Disney's first skeleton princess perhaps?

And then we have Mulan who was not royalty and did not marry into the crown at the end of the film either.

I really think the reason she's not regarded as a princess is because she's not the main character, nor is the love story the driving force of the film. She and Jack certainly have a love story but it is secondary to his obsession. There are other Disney princesses that aren't the main character (like Aladdin), but in those movies the love story is still the main plot. Sally doesn't fill the narrative role of a Disney princess, so it really doesn't feel like the same kind of story.

She's not a princess because Disney cares about marketability and popularity. Princess Eilonwy and Kida are not princesses because they were not from profitable movies and they are not very marketable. Other girls fall into the same category, like Jane or Megara or Esmeralda.
