How does this one sound to you? A crusty ciabatta, mayo-pesto mix, smoked mozzarella, Virginia ham. Grilled.

Glad you like it! It's legitimately one of my favorite blogs.

I have a minute now, so some thoughts on your sandwich: it sounds really good! Grilling the ciabbata sounds like it'd bring a nice combo of crusty and bready, and combined with the general filling textures, I don't think you'll have anything to worry about in regards to construction. And I think the flavors would probably come together really well with a nice combination of the smoke from the cheese and ham and the flavor of the pesto.

I'd probably add some arugula or some other similar green, so you have the bitterness cutting through the unctuous fat and smoke of the other ingredients somewhat, but then I really like arugula. But I think it could definitely benefit from a note of bitterness or spiciness or something.

All in all, though, a delicious sandwich.

Here are the instructions for the greatest grilled cheese sandwich ever. It's a foolproof method. The sandwich itself is easy to make, but the method is all important.

1) Get a pan. Stick that shit on your stove. Fire up the burner to max. Let it sit while you do the next few steps. Don't dawdle or your pan'll start smoking, but don't hurry either or it won't be hot enough.

2) Get two slices of bread. Any kind, though I like whole grain white bread from Klosterman's, which is local to me. Big loaves and they taste good, for bread. They're also very absorbent. This is important.

Why is it important?

3) Because you're going to take some butter -- and trust me, fake butter is shit for this because no matter how much no-stick spray you use, it will stick -- get a huge dollop of it on your knife, and smear that shit on one slice. Then you take the knife and scrape most of it off. Leave a thin film of butter, just enough that you can see the texture of the bread, but the butter has been stuffed into said bread. Use the butter you scraped off to do the same to the other slice.

4) Take two slices of cheese. One is too few, three is too many. What cheese to use? American cheese is fine, if you're boring. Provolone works. Montery jack is good. Or mix them up -- my latest jams have been montery jack and good old Kroger brand American cheese. Put the cheese aside -- but make sure you remove it from its wrapper first, because time is of the essence with the next step.

5) Throw the first slice of bread onto the pan, butter side down. Throw the cheese onto the bread. Dump the other slice of bread on top, butter side up. Wait for the hissing to subside a bit. Push the sandwich around a bit, especially if you have a gas burner, to maintain maximum heat coverage.

6) FLIP THAT SHIT

7) Your sandwich should now be somewhat brownish/yellow and soaked on one side. Now comes the key part: use your spatula and push the sandwich down, into the pan. This forces the butter into the bread as well as forces the cheese to melt faster.

8) FLIP THAT SHIT AGAIN

9) Repeat the spatula squishing. Don't overdo it. Flip it every half minute or so until both sides are pleasantly brown without being crisp. It's okay if the center's a bit yellow.

10) Serve.

I CONCUR WITH THIS ENTIRE COMMENT. Mmmm toastie, truly a food of the gods. I also recommend investing is a jaffle maker so your sandwich gets sealed along the diagonal and becomes like two triangle pockets of heaven. Variations: a) cheese, tomato (slices patted dry first) and ham, b) cheese, fried egg and tomato sauce (disgusting but also delicious), d) cheese, tomato paste, dried oregano, filling of your choice - pizza toastie! c) forgo the cheese and make a dessert toastie with marshmallows and nutella/chocolate (idgaf). In conclusion: toasties!

Definitely misread the thread as "How do I become my favorite sandwich?"

Experiment with the stuff in your pantry, maybe? I've always been partial to peanut butter, banana, and honey, but I don't think that's the kind of sandwich you're looking for.

Sounds good, but I'm a vegetarian so I'd use tofu turkey/ham instead, haha. But really, it sounds very tasty! I want to make it :)

I like BLT's. Fry up some tofu bacon, add lettuce and tomatoes, then sprinkle tomatoes with salt & pepper and vola! A perfect sandwich. (My go to bread is generally multigrain, but a good white or whole wheat crunchy bun makes it truly scrumptious.)

Another vegetarian here! :D indeed, I was thinking about this too. It's a delicious-sounding idea.

Any sandwich including tomato-mayo-avocado here is called "italiano" (due to the colours). Hot dogs specially. I love italiano hot dogs with a tofu sausage :3b

Mmm. Sounds good. I love tofu sausage as well. I generally buy Tofurky's as they are the easiest to find here. I usually just have it with ketchup or sauerkraut (so kinda like a one ingredient Dinámico, I guess? I also serve it with mashed potatoes on the side - I am Canadian/German.) So yummy.

Sounds yummy! I love mashed potatoes and sauerkraut :DDD It's an awesome combination.

I really recommend you to try a dinamico or an italiano. Avocados are delicious and they go awesome with sandwiches. How much do they cost there? (Here are fairly cheap >>;;;)

I'll have to give it a try! I think avocados are around .50 - 1.50 CAN. I think they get more expensive even when they are out of season. Drat Canada and its long winters!

PASTRAMI. So delicious. I only have it a few times a year but it's so delicious. I crave it. I think a pastrami sandwich on pumpernickel with an intense deli pickle is just the most perfect lunch.

That was a slight exaggeration dear, but seriously sandwiches like Peanut and Jelly and stuff isn't something that we really eat that often, some people might make 'em. I do, but it isn't a Scandinavian thing.

Have a vegan option! Hummus (we get this amazing one with sundried tomatoes in it), slices of a really nice tomato, caramelised garlic (hard to find, you can use caramelised onion at a pinch), and olive spread/tapanade. Serve on a toasted bagel.

Warning: it's messy. Bring napkins.

There was this one amazing one for a special event at my school: baked pear and brie on a baguette. So fucking tasty.
